Bani Zaidan XCI
Bani Zaidan is a farming community within the highlands of Maghrib Ans, Dhamar, perched at 1,800 metres on the rugged edges of Wadi ‘Anis. It is not a single estate but a cluster of neighbouring families whose farms interlock across the mountain slopes. Coffee here is cultivated as a collective endeavour: irrigation channels are shared, pruning and composting methods are exchanged, and harvest days often bring households together in coordinated effort.

This lot has been processed using Qima’s Alchemy protocol, a proprietary system developed through more than 1,300 controlled trials. Combining carbonic maceration with anaerobic fermentation, and supported by precise control of pressure, temperature, and drying, the method enhances flavour complexity while preserving terroir expression.

The coffee itself is Kent, a variety with Yemeni genetic roots. Though first catalogued in India in the 1920s, Kent’s lineage traces back to seeds carried centuries earlier from Yemen’s southern ports, connecting this variety directly to the global history of Arabica coffee.

Cultivated in Bani Zaidan’s cool highland climate and mineral-rich soils, the result is a cup marked by clarity, layered fruit intensity, and a fine sweetness that lingers. It is a clear expression of a community where ancient farming traditions meet innovation, and where coffee continues to embody both history and progress.

Alchemy

The culmination of years of processing experience and more than 1,300 processing experiments, the Qima Alchemy Series represents the next generation of coffee processing innovation. Through these processing innovations, we have successfully added sensorial value to coffees. The resulting cup profiles are bold and enhanced; they maintain the intrinsic flavours and notes that represent the terroir and the genetic background of the coffee.

The Alchemy series relies on a combination of pressure (up to 10 bar/145 psi), temperature control, gas regulation and managed drying, to develop a truly unique set of coffees with unparalleled flavour expression and structure. All of our processing and fermentation protocols are underpinned by principles of chemical engineering, ensuring our innovations are both sensorially unique and scientifically novel.  

TRACEABILITY

Bani Ofair

Bani Ofair is a village in the Ans region of Yemen. It has rugged yet lush terrain. Due to its remote location, there are few roads leading to and from Bani Ofair. The village is fairly cut-off from the others, with limited infrastructure. 

Maghrib Ans

Ans is a region within the governorate of Dhamar. Coffee farming is widespread in the region and many families rely on it completely financially. There are around 60 farming families here growing coffee, corn, potatoes and qat. This region has been growing and cultivating various types of crops for over 7,000 years. There is a shortage of water in the region which impacts farmers and their families. It is often the women and children who must source the clean water, either bringing it back in barrels or using animals to help share the load. 

Dhamar

Dhamar, Yemen's historic governorate, lies between Sana'a and Taiz. It boasts ancient civilizations dating back to 6,000 BC, with remarkable archaeological sites. Agriculture thrives here, with coffee being a standout crop. Renowned for its exceptional taste, Dhamar's coffee is grown in regions like Ans, Bani Fadhl, Magrib Ans, Automa, and Jabal Ash Sharq, benefiting from the diverse topography of plains and mountains.
