FLAVOUR PROFILE

Purple Florals, Rose, Grape Candy, Lychee, Longan, Blackcurrant, Caramelised Sugar

Maghrib Ans XV
Maghrib Ans XV is one of this year’s highest-scoring coffees, awarded 90.29 points by the international jury. Produced by a network of super smallholder farmers across the district of Maghrib Ans, this lot is a distinct variation of Qima’s Alchemy series. Developed through more than 1,300 controlled experiments, Alchemy combines precision fermentation, pressure, temperature, and drying to preserve genetic heritage while enhancing clarity and complexity.

Farming in Maghrib Ans is defined by endurance. Terraces are carved into volcanic slopes between 1,800 and 2,300 metres, where rainfall rarely exceeds 250–400 millimetres a year. The lack of roads and infrastructure makes access to resources difficult. Families often collect and transport clean water in barrels carried by livestock to sustain both their homes and their fields. Despite these challenges, coffee remains central to life here, sustained by long-standing traditions passed down over generations.

This lot is also notable for its variety. Kent, first identified in India in the 1920s for its resistance to coffee leaf rust, traces its genetic lineage to Yemen’s Typica-Bourbon population — the foundation of many of the world’s most celebrated Arabica coffees. Its presence in Maghrib Ans highlights Yemen’s pivotal role in the global story of coffee.

The result is a cup of striking vibrancy. Purple florals and rose give way to layers of grape candy, lychee, and longan, lifted by blackcurrant and caramelised sugar. A coffee that captures both the resilience of its farmers and the depth of its heritage.

Process

Alchemy

The culmination of years of processing experience and more than 1,300 processing experiments, the Qima Alchemy Series represents the next generation of coffee processing innovation. Through these processing innovations, we have successfully added sensorial value to coffees. The resulting cup profiles are bold and enhanced; they maintain the intrinsic flavours and notes that represent the terroir and the genetic background of the coffee.

The Alchemy series relies on a combination of pressure (up to 10 bar/145 psi), temperature control, gas regulation and managed drying, to develop a truly unique set of coffees with unparalleled flavour expression and structure. All of our processing and fermentation protocols are underpinned by principles of chemical engineering, ensuring our innovations are both sensorially unique and scientifically novel.

TRACEABILITY

Maghrib Ans

Maghrib Ans

Ans is a region within the governorate of Dhamar. Coffee farming is widespread in the region and many families rely on it completely financially. There are around 60 farming families here growing coffee, corn, potatoes and qat. This region has been growing and cultivating various types of crops for over 7,000 years. There is a shortage of water in the region which impacts farmers and their families. It is often the women and children who must source the clean water, either bringing it back in barrels or using animals to help share the load.

Dhamar

Dhamar, Yemen's historic governorate, lies between Sana'a and Taiz. It boasts ancient civilizations dating back to 6,000 BC, with remarkable archaeological sites. Agriculture thrives here, with coffee being a standout crop. Renowned for its exceptional taste, Dhamar's coffee is grown in regions like Ans, Bani Fadhl, Magrib Ans, Automa, and Jabal Ash Sharq, benefiting from the diverse topography of plains and mountains.
