FLAVOUR PROFILE

Kiwi, Candied Orange, Musk, Dark Chocolate

Meet the coffee farming community of Bura'a
Bura’a, a region rich in ecological diversity on Yemen’s western coast, is a stronghold of traditional coffee farming. Overlooking the Tihamah Plain and near Hodeidah, Bura’a is known for its rare wildlife and ancient coffee heritage. Here, farmers like Naseem and Akram continue the work passed down by their ancestors, preserving a legacy rooted deep in their land.

Naseem, born in 1998, learned from his father to pick only the red cherries, while Akram, born in 1997, grew up absorbing his father’s meticulous care for the crop. For both, coffee is not just a source of income; it’s a family tradition and a source of pride. Their days start early in the fields, working from dawn to dusk, sustained by a shared love for coffee and a dedication to their craft.

Challenges are constant. Water is scarce, and the allure of more profitable khat cultivation looms. Climate shifts bring droughts and floods that threaten their crops. Despite these pressures, Naseem and Akram remain steadfast, choosing coffee over khat, even when returns are low. They endure financial strain, driven by a commitment to their heritage.

Looking forward, Naseem and Akram envision a stronger future for Yemeni coffee. They call on future generations to expand cultivation, preserve the craft, and seek fair prices. For them, every coffee tree in Bura’a stands as a symbol of resilience and a promise to keep the legacy alive.

Process

Natural

Natural process is a time-honored coffee processing method that results in extraordinary depth and complexity of flavour. The process requires meticulous management throughout to result in flavour clarity.

After selective harvesting, Qima's on-ground team promptly collects the cherries at the farm gate and transports them to our in-house drying facilities. The cherries are then placed on raised parabolic drying beds, where they are left to dry until the insides have reached the optimal moisture level. This can take between 15 to 25 days. The cherries are turned periodically during drying to avoid over fermentation. Moisture, density and BRIX levels are closely monitored to ensure uniformity and quality.

Buraa

Bura’a is an ecologically rich and significant region along the westernmost coast of Yemen, overlooking the Tihamah Plain, and is known for its beautiful and charming wildlife sanctuary. It is home to rare flora and fauna, second only to Socotra governorate on that front. Bura’a is about 50 kilometres away from Hodeidah city.

Hudaydah

Hodeidah is the fourth-largest governorate in Yemen. It is situated on the coast of the Red Sea and used to be one of the most important ports in Yemen, erstwhile used to export coffee, cotton and dates before the turmoil began in the country. Hodeidah is also a historic gem: there are more than a hundred ancient mosques and monuments here, including one of the oldest universities in the world, reportedly founded around 972 CE.
